Proscuitto-Wrapped Mini Egg Frittata Muffins
Organic Eggs baked in a muffin tin that is lined with Prosciutto. The egg mixture is filled with sautéed mushrooms, onions, garlic, cherry tomatoes and spinach. These mini frittatas are another GF favorite. These come with a simple side salad with toasted walnuts and homemade balsamic vinaigrette.
Grilled Lemon Chicken Salad
Chicken breasts marinated in lemons, garlic, thyme and olive oil then grilled perfectly. Put that on top of an assortment of lettuces, red,orange and yellow peppers, sugar-snap peas and more lemon vinaigrette. Perfect summer salad. It’s super light and refreshing.
Chipotle Barbacoa Tacos
This beef is slow-roasted in a bath of chipotles, lime, tomato and various spices. This would be perfect in a tortilla or a lettuce cup. These taco’s come with Wholly guacamole, my own pickled red onions, shaved radishes and a dash of fresh cilantro. Since there is no side with this one, we’ll add more more meat so you can share with your favorites 🙂
Bacon-Coconut Sugar Pork Tenderloins with Major Grey Chutney
I saved the best one for last. This one is going to be a show stopper. Pork Tenderloins covered in bacon. After it’s browned, I’m going to smother it with Major Grey Chutney so it gets all dark and caramelized. What the heck is Major Grey chutney and where does it come from? It’s reported that Major Grey was a British solider living in British India. He created a very exciting chutney of Mangos, sugar, vinegar, raises, fresh ginger, lemon, chili powder, nutmeg, garlic and cinnamon. Of course, I have paleofied my version. This WILL be awesome. Do not sleep on this one. This comes with a side of sautéed spinach flavored with garlic and shallots.
