Paleo Huevos Rancheros
I made a point to step up the breakfast game at Girl Friday. In your black box of goodness, you will receive 2 paleo flour tortillas, scrambled eggs with a Salsa Roja sauce on top with a side of chorizo. Oh boy. This may be a little on the spicy side, kids!
Thai-Steak Salad
I’ve been wanting to make this every since I started Girl Friday. This is one of my absolute favorites. The steak is marinated in lime juice, red-pepper flakes and coconut aminos. It’s then grilled and placed on top of a medley of my favorite lettuces, carrot ribbons and fresh mint. Top that off with some toasted almonds and you have yourself a nice little salad for lunch!
Slow-Cooker Chicken Tacos
These slow cooker tacos are ridiculous! We made them at Girl Friday a few months ago and they were so good. I got a lot of compliments on these. The chicken is slow-roasted with tomatoes, garlic, serrano chiles, onions, handfuls of cilantro and lots of spices. These come with salsa, Wholly Guacamole and 3 lettuce cups.
Grilled Garlic Marinated Chicken Cutlets, Grilled Asparagus & Roasted Potatoes
Thin pieces of chicken marinated in garlic, vinegar and fresh thyme. Very simple but so flavorful. Add some grilled asparagus and roasted potatoes to the party and you have a very satisfying dinner and maybe lunch for the next day!
Chicken Tomatillo aka The Sean Special
As some of you may know, I cook individual things for people aside from the weekly menu. My loyal food receiver, Sean gets this every week. He loves it. It’s slow-roasted chicken with handfuls of tomatillos, red onion, garlic and serrano chiles. After the chicken is roasted and shredded, I make a sauce with all the roasted veggies along with a splash of lime. These come with roasted cauliflower & carrots on the side.
