Paleo Banana Pancakes with Maple Sausage
Since everyone begged for ALL the leftovers, we decided to make more pancakes. This time we’ll do it with bananas. Maybe we’ll throw in some mini chocolate chips. Since these are paleo, we only use Enjoy Life chips that are Dairy-Free. If that is too much for you, you can have them omitted. On the side, we making our own sausage again but with maple syrup and spices.
Cape Cod Chopped Salad with Grilled Chicken
This lunchy type salad consists of arugula & various other lettuces, bacon, Granny Smith apples, walnuts, dried cranberries and Blue Cheese on the side. The vinaigrette is a nice mixture of vinegar, orange zest, orange juice and olive oil. As always, you can omit the cheese but it does go perfectly in the salad.
Grilled Steak with Grilled Peach Salsa
Do you love sweet, savory and spicy? We do and this dinner happily gives you all 3! Perfectly grilled steak topped with a super fresh grilled peach peach salsa. The salsa is made up of grilled local peaches, plum tomatoes, a few sermon’s and lime juice. So easy and so good. Grilled zucchini will come on the side because I love grilled zucchini just as much as I love grilled red onions.
Slow-Roasted Kalua Pork with Pineapple Rice
This is a staple. It’s always good and never disappoints. We roast a pork shoulder roast in Alaea salt. Alaea salt is a special volcanic sea salt from Hawaii. It’s delicious and smokey. The pork loves grilled pineapple rice by it’s side. You have your choice of rice or cauliflower rice.
