They’re back! This is the original ball recipe that we started out with. Everyone has been requesting these, so here they are! Even the kids love them. These are not paleo because they are made with oats. The oats are gluten-free. We also use Enjoy Life chocolate chips. They are soy and dairy free. In addition to other things, we add honey, flax, chia and vanilla. They are the perfect little snack!

Bacon, Zucchini & Red Pepper Breakfast Bake
Breakfast bakes are our thing. We make these every week. This one has bacon, shredded zucchini and roasted red peppers. To make this fluffier, we add a little coconut milk and add some Italian seasoning and salt & pepper!

Paleo Cobb Salad

Buffalo Chicken Stuffed Sweet Potato with your choice of Goat Cheese or Paleo Ranch Dressing
Wow. People went nuts over these. The goat cheese sauce was so good that we dipped everything in it. This has everything you need. This also makes a good dinner option as well. I love stuffing potatoes. I think the potatoes love it too. Ha ha. We take a decent sized sweet potato and fill it with a slow-roasted chicken, a super clean buffalo sauce, carrots, celery and a little spice. The goat cheese or ranch dressing come on the side.

Paleo Pulled Pork
Since we will be celebrating Memorial Day, it’s got me in the mood. We made a lot of this in the summer. Most catering jobs request this. The BBQ sauce is homemade and Paleo legit. You can’t have our pulled pork without pickled red onions. It’s a must. My version of potato salad made with homemade paleo mayo, a mixture of potatoes, red peppers, cornichons (baby french pickles), celery, onion, scallions and hard-boiled eggs.

Grilled Smoked Pork Chops with Apple & Bacon Goodness
When I first started eating more paleo, this is one of the first recipes I made. My girl, Becky shared this, and it was my favorite thing in the world. It’s been years and I forgot about it. I looked into my old messages from her and I found it! It was like Christmas. With this recipe, we’re going to grill a smoked pork chop from Cheplics. These chops are the shiz because they smoke without any crap and everything is low sugar. The sauce will come on the side and it’s made up of granny smith apples, garlic, onions and pecans. This is going to be a GF favorite without a doubt! PYO side with this one!
