Steak & Eggs Frittata

Apparently, I ask for suggestions from my friends and never listen. Yesterday, they suggested this, and I’m going with it because it does sound wonderful. Just like our typical breakfast bakes but with lots of tender steak, oven roasted potatoes, red onions and peppers. How good does that sound? Let’s give a choice this week to get it with or without cheddar cheese.

Chocolate Hazelnut Protein Ballz

Chocolate and Hazelnut is my jam! Of course the chocolate comes from unsweetened cocoa powder, and the sweetness comes from dates. Add some toasted hazelnuts, a splash of vanilla and a super clean protein powder and you have some delicious ballz. 1 order contains 12 ballz.

Cashew Chicken Salad

Do you remember when we went through a wrap faze? We made a Cashew Chicken Salad Wrap every week for a couple months. It was super tasty and I’ve been thinking about these past couple of weeks. Next week seemed like the perfect time to put this back on the menu. No wrap this time. We slow-roast the chicken overnight so it’s super tender. We add it to a bowl of homemade paleo mayo, vinegar, coconut sugar, sesame oil, dijon, cashews, green onions, mandarin oranges and red cabbage. 1 Order comes in a 16oz container.

Paleo Taco Salad

We made this a few weeks ago and I need more!! This is one labor intensive salad but worth every bit of effort. Of course, we make our own taco seasoning and add it the freshly ground meat from Cheplics. Add that on top of super crisp romaine, plum tomatoes, yellow and red peppers, green onions and grape tomatoes. The star of this show is the Avocado Cilantro Lime Sauce. I’m not a big fan of cilantro but this is pretty mild combined with fresh avocado, lime juice, jalapeños, garlic and avocado oil. It’s a perfect salad.

Pork Shoulder with Salsa Verde

This is a classic GF dinner. We slow-roast a pork shoulder with a blend of garlic and spices. We serve a salsa verde made up of garlic, parsley, lemon, red-wine vinaigrette, fresh rosemary & sage, anchovies and garlic. So fresh. So clean. This comes with your choice of veggies.

Spaghetti Squash Pad Thai

I love spaghetti squash. I never gave it enough thought or respect until my girl, Nicole made it with her version of Sausage & Peppers. After trying hers, I was a believer! I also like Pad Thai so I thought this would be the perfect recipe for GF. The sauce is made with red-wine vinegar, Red Boat Fish sauce and a dab of coconut sugar. The body of the Pad Thai is made with spaghetti squash, grilled chicken, onion, eggs, garlic, mung beans, chopped almonds, lime, cilantro and red pepper flakes.
