Sweet Potato Hash with Sausage, Caramelized Onions, Eggs and Spinach
This is my GF favorite. The sweet potato and onion are roasted until they are deep brown and caramelized. Add that to the sausage, a sunny-side up egg and place on a bed on spinach. You could even enjoy this for dinner!

Paleo Greek Chopped Salad with Grilled Chicken
I love a chopped salad. Little bite sized pieces make everything better! This salad has grape tomatoes, Kalamata olives, cucumbers, canned artichokes, red peppers, red onions and parsley. You can choose to have it with feta cheese!

Thai Beef Salad with Ginger-Lime Dressing
I seriously dream about this salad. The steak is perfect when mixed with the vinaigrette. The saltiness from the roasted almonds takes it to another level. Cucumbers, cherry tomatoes, shaved carrots, fresh basil and fresh mint make this salad utterly perfect!

Spaghetti & Meatballs with Zoodles
Who doesn’t love noodles? We just bought a contraption to make zoodling even faster, so expect to see them on the menu often! Traditional meatballs made with onions, garlic, parsley and mushrooms. I don’t normally use mushrooms but they really keep the meatballs from drying out. The sauce is homemade and made from San Marzano tomatoes. Put those over some freshly zoodled zucchini and you have a great dinner. My kids are super picky and they will eat these. They can’t even taste the mushrooms!

BBQ Pot Roast + Grilled Veggies
Growing up, we ate pot roast with potatoes and carrots EVERY Sunday of my young life. Needless to say, I don’t ever want to eat it again! This recipe excites me and it’s a good enough twist for me to touch it. The meat is slow-roasted overnight in our own Paleo bbq sauce. Since everyone loves our grilled veggies, we’re going to add them to the mix. I wasn’t sure how to please the masses with a starch so we’re giving you a choice!
