This is the second time around for these balls. Same base as Midge’s ballz but with almonds, honey, dried cranberries, protein powder and chia seeds.

Scotch Eggs
For me, this is the perfect breakfast all wrapped up together in a yummy ball. For those of you that have not tried them yet, we take a hard-boiled egg and coat it in breakfast sausage that we spice ourselves with onion, chives, sage and thyme. The coating on the outside is almonds and sesame seeds. This breakfast comes on a bed of arugula with spicy paleo mayo and cup of blueberries and strawberries.

Bang Bang Shrimp Salad
These are incredible. When we made them last time, everything was perfect except for the paleo tortilla. I just don’t see the point. The tortillas are time consuming and don’t really taste that great. We wanted to offer these again but weren’t sure how to do it. That’s when Kelly suggested we make a salad with arugula and field greens. The body of the taco salad is a medley of cabbages, cilantro, green onions, white wine vinegar and honey. Topped with shrimp, homemade sweet chili sauce and paleo bang bang sauce.

Grilled Chicken & Avocado Wraps
This recipe is making its debut. Grilled chicken is the main ingredient. For this lunch, we’re not just throwing in some avocado but we’re making a lighter guacamole with avocados, lime juice and cilantro (OPTION AVAILABLE WITHOUT CILANTRO). Heirloom cherry tomatoes and green onion come with it. As a very special treat, we’ll top it with a smidge of Paleo cashew cream. Wrap it all up in a lettuce cup for the perfect lunch. How good does that sound?

Coconut Chicken Curry Stew
Who eats stew in the summer? We do. It’s light and super flavorful. It’s a nice break from all the grilled deliciousness. Chicken thighs are slow-roasted overnight with carrots, onions, garlic, fresh ginger, chicken stock, coconut milk and curry. This comes in a 16oz container.

Grilled Chicken with Eggplant Salad with Israeli Couscous and Basil
This was my Mom’s favorite dinner. She requested this often especially in the summer. Israeli couscous is a bigger ball of grain. It’s still light and mixes well with the eggplant, shallots, red wine vinegar and fresh basil. Very light and flavorful. Couscous is a grain so this is not paleo.
