Coconut Chia Pudding with Bluberry Ginger Compote
This is the Chia that we made for the opening. This is one of my favorites because this recipe made me a Chia believer. The base of this chia is simple. Coconut milk, maple syrup, vanilla and lime juice and zest. The compote of cooking down blueberries, fresh ginger, water and coconut sugar is super simple, but when that compote cooks for a few hours, the result is just a hint of natural sweetness. Add some slightly salty pistachios and you have the perfect Chia.

Twice Baked Breakfast Sweet Potatoes + Fruit Cup
This is Kelly’s favorite breakfast to make. We take a big sweet potato and bake it. After it cools, we scoop out the insides and add some delicious magic to them, and put them back in. We put an egg in the middle and bake until perfectly done. After they come out, we sprinkle them with some bacon! This comes with a fruit cup.

Paleo Taco Salad with a Avocado Cilantro Lime Sauce
This is one labor intensive salad but worth every bit of effort. Of course, we make our own taco seasoning and add it the freshly ground meat from Cheplics. Add that on top of super crisp romaine, plum tomatoes, yellow and red peppers, green onions and grape tomatoes. The star of this show is the Avocado Cilantro Lime Sauce. I’m not a big fan of cilantro but this is pretty mild combined with fresh avocado, lime juice, jalapeños, garlic and avocado oil. It’s a perfect salad.

Greek Salad with Grilled Chicken
The description says it all. Our salad is made up four different kinds of lettuces, red onion, Kalamata olives, cucumbers, grape tomatoes, red pepper, feta and grilled chicken. The Greek dressing is made with OILIO olive oil. Need I say more? You have the option to get it without the feta.

Thai Ginger Chicken Stir-Fry
This is the second time around for this stir-fry. It’s simple but the flavors pack a perfect punch. Thinly sliced chicken, red peppers and red onion. Add green onion, tons of fresh ginger and coconut aminos. Super fresh and clean. This comes with basmati rice.

This is super healthy and super flavorful. We slow roast the pork overnight with jerk spices so it has that awesome flavor. We top it with a caribbean salsa made up of mangos, avocado, red onion, cilantro and lime. So bright and fresh. You have your choice of basmati or cauliflower rice.
