Almond Butter & Jelly Chia Pudding
I’ve been eyeing up this recipe for months. Next week is the week, and I cant wait to taste it. The chia part of the pudding’ is made with almond and coconut milk, maple syrup for sweetness, almond butter and vanilla. The jelly part is a blueberry compote made with blueberries and orange juice.

The Marian Salad
When I had my middle child, my friend Marian brought me the best dinner. It was a staple in our house for years. I decided to combine the chicken with the salad to share with you all. The salad is made with handfuls of spinach, toasted cashews and golden raisins. Add some grilled chicken with a apple cider vinaigrette. The salty cashews and the sweet golden raisins are a perfect combination.
