Paleo French Toast with Fried Bananas & Salted Coconut Caramel

Hot damn! This is ridiculous, I know but I had to do it. We make our own Paleo bread that you can’t even tell it’s Paleo. We make the caramel with coconut sugar, coconut milk, maple syrup and vanilla. We crisp up the bananas in cinnamon and ghee as we soak the bread in coconut milk, vanilla and eggs. I know it’s not super healthy but doesn’t it sound amazing? We need something savory to go with this so we’ll add 3 links of homemade sausage links from Cheplics.
Paleo Carrot Halwa

What the hell is that? It’s my husband’s favorite dessert. It’s an Indian dish that is very unusual. It’s made with grated carrots, whole milk, dried fruit, and nuts, and it has a delicious light fudgey texture. Since we’re making it paleo, we’ll make it with coconut milk instead. I love my dude a lot so to show my appreciation for all his hard work, I put it on the menu just for him.
French Onion Soup

I’ve been sitting here for hours trying to fight off my need for this. All roads are coming back to this so I’m going with it. This is not Paleo. It’s not even primal. It’s just delicious soup that is made with red wine and comes with 2 slices of gruyere crostini. I want this now!
Fall Salad with Grilled Chicken, Candied Pecans & Maple Balsamic Dressing

We did this a couple of weeks ago. Since the dressing was one of the best ever, we decided to bring it back one last time. Everything in this salad compliments each other perfectly. Mixed greens, radicchio, red pears and shaved parmesan make this salad great. Add the grilled chicken and maple-balsamic dressing and you have a nice fall salad.
Paleo Lasagna

It’s back! The biggest pain in the butt to make but so worth it. We spend a lot of time making this so perfect that you won’t even know the difference. Instead of pasta, we make egg crepes. They are light but sturdy like a noodle. Instead of ricotta cheese, we make cheese from cashews. Yes, cashews. We soak them for hours then we add some lemon juice, olive oil and s & p. We blend in a food processor until it looks just like ricotta. It’s actually tastes better because of the nutty flavor. Can it get better? Yes! I make my own sauce using San Marzano tomatoes, mild sausage, fresh basil and handfuls of fresh baby spinach. It’s perfectly paleo without tasting paleo. 1 order contains 1 generous portion of lasagna and a small side salad with our homemade balsamic vinaigrette.
Stuffed Squash

This is a new one on the GF list. We made something similar a couple of weeks ago but I decided to make this one super healthy but with a grain & cheese. Acorn squash stuffed with lots of great things like sweet Italian chicken sausage, leeks, apple, spinach, fresh sage, quinoa and a sprinkling of cheddar cheese. 1 order comes with 1- 1/2 of a squash and a nice side salad with our homemade balsamic vinaigrette.

I’m so over flank steak. This week we’re going with a nice sirloin. For the next month, we’ll be offering the wedding marinade. It never disappoints because it’s made with lots of fresh garlic, serrano chiles, fresh ginger, olive oil, coconut aminos, apple cider vinegar, fish sauce, lemons and fresh thyme.
