Tex Mex Breakfast Bake
I haven’t made this in a long time. My girl, Liz loves it so I decided to put it on the menu. This is a generous piece of breakfast bake loaded with ground meat, sweet potatoes, homemade enchilada sauce, onions, garlic and spices. As a special treat, a side of the homemade enchilada sauce to pour over the top. This comes with a side of fruit. As a side note, it’s has a very subtle kick to it.
Thai Chicken Salad
I had more compliments about this dressing. Most of them referred to themselves licking the plate to get every last drop of dressing. I’d say this one was a success. I decided to switch it up and do grilled chicken instead of shrimp. This colorful salad comes layered for your visual pleasure. The layers consist of perfectly grilled chicken, carrots, red cabbage, cucumber, arugula, salad greens, basil, cilantro and almonds with a kick! Mix it all up in the container and dumb it out on your plate! Since I’m no fan of cilantro, you can have a choice of having it left out. How accommodating is that?
Summer Garden Pasta
I’m so happy that zucchini is plentiful at the farmers market. I’ve been waiting all this time to make noodles from zucchini. If you have never had them, you’re in for a treat. Best noodle, hands down! The noodles are a bed for a no-cook sauce of all fresh things. I marinate bunches of mini tomatoes in garlic, basil and a few drops of balsamic. Because I cannot resist, I add fresh mozzarella and freshly grated parmigiano reggiano to the mix. I know cheese is not paleo but it is considered primal so you will have your choice on how you want it! This pasta dish comes with a nice & simple green salad.
Grilled Wedding Chicken with Green Bean Slaw
I’m super excited for this one for a few reasons. 1. It’s going to be delicious 2. I’m offering up another style of chicken. The chicken is marinated in lots of flavorful things like garlic, serrano’s, fresh ginger, olive oil, coconut amino’s, vinegar, fish sauce and thyme then grilled until it’s caramelized. On the side is a green bean slaw. It’s very crisp. French green beans, carrots, parsnips, red bell pepper and red onion make the base of the salad. All that pretty stuff is mixed in a light & flavorful vinaigrette. This is going to look so pretty in my containers. **At Girl Friday, we always use boneless skinless breasts. I want to offer chicken thighs as well because they are so tasty. Since I’m not sure how you all feel about that, we’ll offer a choice of the two.
