Paleo Layered Chia & Almond Pudding Parfait
I’ve been eyeing up this recipe from “Against All Grain” for a long time. It looks super fun to make so i’m going with it. I might even make it in the glass jar just like she did! On the bottom of the parfait, we have bananas & almond butter, the middle has homemade chocolate chia pudding and it’s topped with fresh raspberries, blueberries and toasted almonds. No doubt this is considered a treat! The Chrissie Salad
I met Chrissie at Crossfit South Hills a few years ago. She was a chef by trade and I remember her telling me about this salad she made. I made it that weekend and it was amazing. The dressing is a blend of homemade pesto and a classic caesar. She added a mixture of lettuces, grilled chicken, pancetta and some grilled veggies. It was perfect! This salad does have parmesan in it so that would make it primal. Want it paleo, no problem. We can make that happen too!
Spaghetti Bolognese with Zucchini Noodles
What else can I say? It’s in there! Homemade sauce with a blend of ground meat & pork. Put that on top of some zucchini noodles and you have dinner! This comes with a side salad with balsamic vinaigrette.
Grilled Chicken with Tomato & Beet Salad
The tomato & beet salad is one of the prettiest things I have ever made. The salad is made with heirloom tomatoes, cherry tomatoes, beets, a good quality olive oil and a little sprinkle of feta cheese. This is the star of the black container. Did I mention there is grilled chicken with this beautiful salad?
