I’ve talked about Tina before. She is who inspired me to cook. Tina’s daughter, Merissa and I were young mothers raising our babies together. Merissa comes from a Greek/Italian family, so you can imagine the amazing lunches and family dinners that I was invited to. Everything was fresh and utterly amazing. I wanted to be Tina when I grew up! This pasta was her easy go-to. The broccoli and cherry tomatoes are roasted in the oven, leaving the broccoli with that amazing deep flavor, but still with a bite. The tomatoes are softened just enough to add a little flavor pop! Bringing it all together is a sauce made with olive oil, lots of garlic, Romano and parm.
