Slow-Roasted Mexican Beef | Single Serving

Here’s an old favorite. It’s one of my favorites and it will be one of yours as well. We take a thick cut of delicious beef and put it in a slow cooker with salsa, onion, tomato paste, garlic, chili powder and cilantro. We slow roasted it overnight and shred it up. Add a few thinly sliced radishes on top, two flour tortillas, some Wholly Guacamole and your choice of cilantro-lime rice, and you have a delicious lunch or dinner.
