Slow-Roasted Mexican Beef | Single Serving

Here’s an old favorite. We take a thick, delicious cut of beef and put it in a slow cooker with salsa, onion, tomato paste, garlic, chili powder and cilantro. We slow roasted it overnight and shred it up. Add a few thinly sliced radishes on top, two flour tortillas, some guacamole and your choice of cilantro-lime rice, and you have a delicious lunch or dinner.
