This is one of our most requested lunches when we cater. The salad is a base of three different lettuces with marinated and grilled chicken, grape tomatoes, english cucumber, shredded carrot, grilled pepper and red onion and roasted potatoes instead of fries. If you order this salad, all you have to do is put your potatoes in a pan with a little olive oil and crisp them back up! Add your protein to the pan as well. Let’s talk about dressing. A few years back, I attended a lacrosse banquet with my daughter. My friend, Sherry, was in the buffet line with me and I noticed that she mixed her ranch and balsamic. Confused, I asked her what she was doing. She explained that it was the most amazing thing and that I should try it. I tried it and it WAS the most amazing thing.
