I love a good taco salad. Our original GF Taco salad was beat. It needed some updating, so here it is. This time around, the taco meat will be separate so you can heat up the meat without getting lettuce in there. Romaine lettuce is the classic bed for this salad. On top, house-seasoned taco meat, corn, black beans, cherry tomatoes, red onion and a smidge of chedda cheese. You have your choice of dressing. I love french dressing on mine. Forget that stuff in the bottle, I make my own. The second option is an Avocado Lime Dressing–avocados, olive oil, lime, cilantro, jalapeños and garlic.
