Let’s talk about the Marian Dinner. My girl made this for me when I had my middle daughter, Sloane. It was one of my favorites, and I make this dinner for my family every couple of months. The crispy oven roasted chicken is breaded in a panko/parm mix. The rice pilaf is homemade and absolutely delicious, but the salad is what brings it all together. The salad is made with baby spinach, roasted cashews and golden raisins. The dressing is made with a neutral oil, apple cider vinegar and garlic. It really brings it all together. I like to combine it all in a bowl and eat it together. It’s simple and balanced.
