Marinated chicken is grilled perfectly and topped with mozzarella cheese, ho-made pesto and cherry tomatoes touched with a little lemon to bring it all home. I cannot think of a more perfect weeknight dinner. This comes with a side of Spaghetti Aglio E Olio or Garlic Grilled Zucchini.
