This is the OG that we made for the opening of Girl Friday. It’s one of my favorites because this recipe made me a chia believer. The base is simple–coconut milk, maple syzurp, vanilla, lime juice and zest. The compote is cooked down blueberries, fresh ginger, water and coconut sugar, and when it’s cooked down for a few hours, the result is just a hint of natural sweetness. Add some slightly salty pistachios and you have the perfect chia.
