This is the OG Chia that we made for the opening. It’s one of my favorites because this recipe made me a chia believer. The base of this chia is simple–coconut milk, maple syrup, vanilla and lime juice and zest. The compote of cooked down blueberries, fresh ginger, water and coconut sugar is super simple, but when that compote cooks for a few hours, the result is just a hint of natural sweetness. Add some slightly salty pistachios and you have the perfect chia.
