Chicken Tacos with Poblano Black Beans & Cilantro Lime Rice – Single Serving

This is the perfect weeknight dinner. My kids love it, and no doubt we’ll be eating it next week.  The chicken is slow roasted with tomatoes, onions, garlic, serranos for a little heat, cumin, chili powder, coriander and a pinch of cayenne. On the side Poblano black beans – we sauté shallots and poblano chilis with a little cumin and a few other things. The rice has just a little cilantro and hint of lime. As if that’s not enough you get a pack of guac and two tortillas. Nutritional counts include everything except the rice and tortillas!
