Chicken Tacos with Poblano Black Beans & Cilantro Lime Rice – Single Serving

This is the perfect weeknight dinner. My kids love it, and no doubt we’ll be eating it next week. It’s super tasty and all you have to do is warm up your favorite kind of tortilla or use lettuce wraps and BOOM! The chicken is slow roasted with tomatoes, onions, garlic, serranos for a little heat, cumin, chili powder, coriander and a pinch of cayenne. On the side Poblano black beans – we sauté shallots and poblano chilis with a little cumin and a few other things. The rice has just a little cilantro and hint of lime. As if that’s not enough you get a pack of guac. Nutritional counts include everything except the rice.!
