This is the perfect weeknight dinner. My kids even love it. The chicken is slow roasted with tomatoes, onions, garlic, serranos for a little heat, cumin, chili powder, coriander and a pinch of cayenne. On the side, Poblano black beans – we sauté shallots and poblano chilis with a little cumin and a few other things. The rice has just a little cilantro and hint of lime. As if that’s not enough you get a pack of guac and two tortillas.
