This is the perfect weeknight dinner. My kids love it, and no doubt we’ll be eating it next week. It’s super tasty and all you have to do is warm up your favorite kind of tortilla or use lettuce wraps and BOOM! The chicken is slow roasted with tomatoes, onions, garlic, serranos for a little heat, cumin, chili powder, coriander and a pinch of cayenne. You get a heaping cup of this delicious mixture plus 1 pack of Wholly guacamole and your choice of rice! Nutritional counts include everything!
