I made these last Monday night for dinner and everyone loved them except for my 11 yr old. She doesn’t eat anything but the other two loved it. The portions are generous. I could barely eat 2 and I can eat! Homemade enchilada sauce is the start to all this goodness. The filling is made with chicken, green chili, onion and Mexican cheese. We put more enchilada sauce on top with more cheese and bake it. We ate ours with sour cream and guac. On the side is Mexican street corn salad made with cotija cheese. It’s a delightful dinner and you gonna like it!
