Ok, people. This is my absolute favorite dinner on the planet. The kids beg for it too. My bestie Cari first made it for me years ago, and it was the most delicious thing. I’m not sure what she does to it, but it’s so great. Mine is ALMOST as good as hers. Almost. The chicken pieces are slowly roasted in the oven on a bed of garlic, onion and lemons. Once the chicken is roasted and the onions and garlic are caramelized, we pull the chicken from the bone and add it back to the onions and garlic and those toasted homemade croutons. Can we talk about the croutons? We take a Breadworks baguette, cube it and toss it with some olive oil and butter. We gently roast it in the oven until it’s crisp on the outside and soft and chewy on the inside. Is this dinner best served right out of the oven? Sure, but I can tell you it’s just as good the next day. I promise. This awesome dinner comes with mashed Yukon potatoes on the side.
