These “stuffed” sweet potatoes are the people’s champ! They’re not actually stufed anymore, even though the potatoes liked it. Perfect for lunch or dinner, they’ve got everything you need. We roast a nice-sized sweet potato and top it with slow-roasted chicken, a super clean buffalo sauce, carrots, celery and a little spice. The goat cheese sauce is so good that we dip everything in it, or you can choose ranch. Up to you, but I know what I’d pick!
