Bangers & Mash (Colcannon)

This is my one of my favorites. I make this every year on St. Patricks Day! What’s a banger? It’s an Irish sausage made with pork and special spices. Each variation is different. I’m beyond lucky that my guys at Cheplics make them fresh every year. I’m very happy to get in on that action. Let’s talk Mash. Colcannon is mashed potatoes with a few extra tasty things like cabbage, cream, leeks, Yukon golds and garlic. Mashed perfectly and topped with a little green onion for color! If you have a little brown mustard in the fridge, pull it out. Have some of that goodness with your bangers!
