Whew. It’s Monday. I need to detox. I went around the house and put all the leftover Thanksgiving stuff in the trash. That included the delicious leftover pumpkin pie. I felt a little bad about it since I’m not real big into wasting but I just had too. Time to menu plan for the week. I want to be extra mindful this month since I know there will many opportunities to indulge. As long as I keep my week legit and maintain my gym schedule, I may just make it out alive come January. Who knows, maybe I’ll do my first ever Whole 30 in January. Who’s with me?
One to the menu planning. My friends Nicole and Kelly swear by the paleo cookbook “Well Fed” by Melissa Joulwan. I just happen to have a copy that I borrowed from the gym like a year ago. I plan to make some food from it this week and see what it’s all about. Then I will return it….I promise.
For Girl Friday, I plan to make another big batch of my Chicken Chili. Everyone that orders it, loves it. If you’re interested in buying some, message me and i’ll make it happen. It will be available tomorrow evening. Normally I would do my GF cooking on Monday but my girlies are home and I plan on taking them to a trampoline park for the afternoon. In addition to the Chicken Chili, I’m going to make a big batch of my Thai Beef. It’s simple, tasty and a little spicy. It will come with coconut jasmine rice or coconut cauliflower rice.
Here’s what’s on the menu this week:
Monday– Grilled Chicken, salad with lots of veggies and roasted zucchini
Tuesday– Thai beef with both rices. (I have to make sure they are on point!)
Wednesday– Paleo Shepherd’s Pie (Well Fed) and a nice simple salad with toasted walnuts.
Thursday– Stovetop Pork Carnitas (The Clothes make the Girl) with homemade guacamole, Trader Joe’s handmade tortilla’s for the kiddies and paleo tortilla’s for my dude and I.
This is as far as I could go this morning. I’ll shop for the weekend on Friday morning.
