There is a new chicken salad in town. We’re testing this one out. Ultimately, you are the judge on this one. My girl, Jen made it and loved it. The chicken is poached slow in organic chicken stock. After hand pulling the chicken, we throw in some red onion, Kalamata olives from Liokareas, sun dried tomatoes, feta cheese and toasted pine nuts. The dressing is made with Liokareas olive oil, greek yogurt, a touch of mayo and salt & peppa.
